Our honeydew is produced by the bees from the unique unspoilt native Beech forests of New Zealand's famous, Southern Alps. At certain times of the year, these alpine Beech forests drip with a rich dew that the bees collect and turn into this deliciously, healthy honeydew honey.

Thyme honey is a honey that will naturally crystallise unless heated. For this reason we crystallise thyme honey with the creaming process that produces a very fine, buttery texture which is easy to handle. Our honeys are processed without pasteurisation to bring them to you in a raw, natural, healthy state.

Color: Mid-tan dark cream
Taste: Light acidity and not overly sweet

Our honeydew is produced, by the bees, from the unique nectar of a single species of wild Thyme (Thymus vulgaris) that has naturalised in a small sub alpine, rugged, arid area of Central Otago in the South Island of New Zealand. Each spring this plant turns the hill sides purple with its flowers and the aroma covers the countryside for miles around. This thyme is believed to be the only naturalised thyme outside Europe.

Manuka honey is a honey that will naturally crystallise unless heated. Color: Tawny tan
Taste: Big tannic plus good acidity dominate sweetness: a savoury result.
Flavour-aroma: Orange peel, oak, hint of nutmeg.
Texture: Manuka is naturally very thixotropic (jellylike) and although smooth it can be very firm and fudge-like.
Best for: Adds rich complexity to savoury sauces and marinades, great as a spread on nutty grain breads or try with smoked salmon. And if you are smoking salmon yourself, put a fine film of our Manuka honey over the topside flesh before smoking, instead of sugar. The result is sensational!

Rata honey is a honey that will naturally crystallise very fast and cannot be packed as a liquid honey. For this reason we crystallise Rata honey with the creaming process which produces an exceptionally fine-grained silk-like buttery texture which is easy to handle. Our honeys are processed without pasteurisation to bring them to you in a raw, natural and healthy state.

Color: Cream-blonde.
Taste: A gentle acidity that creates a lively spritziness and just the lightest hint of oak.
Flavour-aroma: Limes and buttermilk.
